Here’s a special treat from Huila!

Fabian, the oldest son of Guacharos members Alirio and Anayibe Ortiz, literally grew up in coffee. He writes “since my childhood and adolescence I was also closely involved in everything related to the production and transformation of coffee, since it is a task that I observed my parents do for as long as I can remember”.

It’s a delight for us to now be able to showcase Fabian’s coffee, and we’re certain he will become as frequent a contributor to our menu as is Alirio.

Fabian, 22, along his brother Santiago, 19, is now in charge of farm management and processing for his own parcels.

His coffee grows alongside avocado, guava, guamo, orange, and also some eucalyptus trees, and he harvests avocado as a companion crop.

Fabian works with 50% conventional and 50% organic fertilization, seeking a balance in the soil microbiology and with the intention of reaching 100% organic, gradually reducing chemical products as has been done until reaching this point.

We purchased 200kg of this pink borbon lot in September 2024 (the entirety of the lot).
